Yay! Another recipe! Here's one that I've made a few weeks in a row, as it is an easy (and tasty) weeknight meal. I am a big Trader Joe's fan (just wish they were on Instacart!) and have found a couple of their staples that work well in this dish: flavored cashews and Soyaki sauce. If you don't have access to these, plain cashews and teriyaki sauce will be fine. Interestingly, the Soyaki sauce has a bit of a cult following — who knew? So if you haven't had it, it's probably worth getting a bottle to have on hand!
Some would accuse me of sticking to a very limited palate (hi, husband 👋) and this is my way of breaking outside our norm a bit. If you are a baby lead weaning (BLW) fan, this recipe is somewhat conducive to that. I'd recommend serving little "balls" of the sticky rice, along with the ground chicken. You can do some cashews as well, as long as your kiddo doesn't have any allergy issues and make sure the pieces are the right size so as not to pose a choking risk.
